Our menus are guidelines to assist in developing the menu you desire for your guests. Our menu offerings range from BBQ to Prime Rib Roast. Is there a favorite dish that you don't see listed? Talk with our chef and see if we can prepare it for you. Vegetarians on your guest list? We can provide dishes for them.

Everyone in Texas loves BBQ. Our BBQ selections can be mixed and matched to suit your tastes.
Slow smoked over mesquite until fork tender. It takes a minimum of 16 hours to prepare our brisket, so 48 hour advance notice is required.
Meat Wagon only smokes whole chickens to obtain the maximum flavor and juiciness.
Pork spare ribs smoked until they are ready to fall off of the bone, then glazed with our own plum based BBQ sauce.
Pork shoulder seasoned and smoked until ready to be pulled into tender shreds. Served with a tangy BBQ sauce and buns.
Meat Wagon offers pinto beans, Southern-style potato salad and of course, our famous cilantro-jalapeno slaw as sides to our BBQ.
Sliced bread, pickles, jalapenos and sliced onions are included at no extra charge.

Roast beef is always a crowd pleaser. We can provide a budget mindful roast, or go all out with a prime rib roast for your guests.
Pork loin crusted with fresh herbs, roasted to perfection and served with a creamy sauce featuring fresh mushroom and finished with sherry.
Fresh grilled chicken breasts topped with a sauce featuring reduced orange juice and fresh herbs.
Beef and/or chicken fajitas, served with beans, Spanish rice and guacamole. Tortillas, sour cream, shredded cheese and a selection of salsas included as well.
Flour tortillas wrapped around a filling of spinach, queso fresca and roasted poblano peppers, topped with salsa verde, Mexican cheese and sour cream.
All entrees, except fajitas, are served with a seasonal vegetable, either buttered potatoes or rice pilaf, a green salad and rolls. Our seasonal vegetables include such dishes as julienned summer squashes, green beans almandine, shredded Brussels sprouts with bacon & Parmesan cheese , squash casserole and roasted broccoli and cauliflower.
